Note the remarkable preservation of the massive defenses encircling the castle, the surrounding buildings, the city streets and Gothic-era Carcassonne Cathedral.Continue driving to the nearby Ch teaux de Lastours, four Cathar castles built on a rocky spur in the valley of the River Orbeil. Learn about their use as a fortification in the Cabard□s region of Cathar Country (Pays Cathare).Next, it’s time to treat your taste buds to a gourmet French meal! Head to Bergerie Aragon, a restaurant awarded one Michelin star, for a wonderful 4-course lunch with your fellow travelers (sample menu below).Follow your lunch with wine tastings at Domaine de Cabrol and Domaine Cazaban. At each winery, you'll be greeted by the owners for a tour of the vineyards.
