First, see the four Castles of Lastours ─ built by the Cathars in 11th century ─ and hear of their medieval past. Take the time to ask questions from your guide, and learn a little about the area’s fascinating history and heritage. Journey further up the hill to enjoy panoramic views of the Montagne Noire, or Black Mountain, and capture the scenery on camera.Your next stop is at a working vineyard and winery. Stroll among row after row of fruit-laden vines, and learn about local grape varieties such as cabernet franc, cabernet sauvignon and merlot from your guide. Visit the cellars with a winemaker, and enjoy a tasting session of some of the winery’s produce.Continue onward to the second vineyard on your tour. Meet the winemaker, see the age-old winemaking process up close and soak up the atmosphere in this delightful working winery. Of course, no visit would be complete without a tasting session, so prepare your palate for a second time and enjoy the complex fruitiness of the delicate wine!At the conclusion of your tour, travel back to Toulouse.
